Beef Tips over Rice
with Burgundy Mushroom Sauce

by Steve Hicks

This is one of my favorite Crock Pot recipes.  It is easy to assemble in the morning before leaving for work.  All you need when you come home is some cooked rice and a fresh green salad.

  • 1½ pounds beef tip steak or stew meat, cut into thumb-sized pieces
  • 1 envelope of Lipton Recipe Secrets onion soup mix
  • 1 10.5oz can Campbell's Golden Mushroom Soup
  • 1 4.5oz  jar sliced mushrooms, drained
  • ½ cup real burgundy wine (do not use cooking wine)
  • ½ tsp black pepper

Mix all ingredients together in a Crock Pot and cook 8-10 hours on LOW.  Serve over hot cooked rice or wide flat egg noodles.   The secret ingredient is the Golden Mushroom Soup.  Do not attempt to substitute regular "cream of mushroom" soup in this recipe.  Serves four but you can easily double this recipe.
