Steve's Chuck Wagon Casserole
by Steven HicksDo you ever yearn for campfire food but just don't feel like
getting out the tent and heading for the woods? Make this hearty dish and simply
"pretend" that you're camping out. Later, put your dishes in the
dishwasher and then climb into your comfortable bed. This recipe is reminiscent of
the days of wagon trains, cowboys and campfires. You may want to cook this easy
recipe on your next campout! Kids will love it!
- 2 16oz cans baked beans (or one 28oz can)
- 1 16oz package "Little Smokies" cocktail sausages
(or you can use regular smoked sausages and cut them in bite sized pieces)
- 1/2 cup honey barbecue sauce
- 1/4 cup finely chopped onion
- 1 8.5oz package of your favorite cornbread mix
Combine beans, little sausages, barbecue sauce and onion in a large
saucepan. Using low heat, stir until heated through and bubbly. Meanwhile,
prepare cornbread mix in a seperate bowl according to package directions. Pour bean
mixture into a ungreased two-quart casserole dish. Next, pour cornbread batter
evenly over bean mixture. Bake in a 375° oven for 20-25 minutes or until cornbread
is done. Serve with corn or any other vegetable and a fresh green salad! |
