Steve's Poached Cod Filets

I often purchase frozen cod filets in three pound bags from a local wholesale club and so I am always looking for interesting ways to prepare them.  Cod is a noble fish but it lacks one essential element; it does not have much flavor.  This can be an advantage because, with the right seasonings, you can make this fish taste any way you want.  This is more of an idea than a recipe, but I want to share it with you because it is so easy and the result is very delicious!.


  • frozen cod filets, any amount, thawed in cool tap water
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 Tbsp (heaping tablespoon) Old Bay Seasoning*
  • 1 tsp salt
  • butter
  • freshly squeezed lemon juice

Thaw frozen cod filets in cool tap water for about 30 minutes. You may have to change the water once. Combine vinegar, water, salt and Old Bay Seasoning in a large non-aluminum (or Teflon-clad) skillet, preferably one with a ridged grill surface in the bottom. Bring liquid to a boil and then add cod filets. It will only take about five minutes or less for the fish to cook and of course, it will be firm and flake easily when done. You can place a cover on the skillet but I prefer to baste the fish by spooning the hot liquid over the fish while it poaches. Gently remove cod filets to a warm plate.  I serve cod with rice and broccoli or any steamed vegetables.

These poached cod filets are delicious just the way they are but you may want to top yours with lemon-butter sauce. You can easily make a lemon butter sauce by melting about four tablespoons of butter in the microwave and stirring in the juice from half a lemon. If you have any leftover cod, refrigerate it and later break into small pieces for adding to a salad!

*Old Bay Seasoning, by McCormick, is popular everywhere in the US and is available in the spice section in most food stores.
