Holiday Green Beans
This recipe will magically transform ordinary canned green beans into a very special side dish. This is very simple to prepare, yet everyone will want to know how you made canned green beans taste like this! This green bean dish is great any day, not just on holidays!
Fry bacon, remove from skillet and set aside. Using approximately 1-2 tablespoons of bacon grease, lightly sauté chopped onion until soft. Add sugar and vinegar, heat and stir over low heat for 5-8 minutes or until mixture becomes a thin syrup. Place green beans in a saucepan, add vinegar-sugar mixture, toss and heat thoroughly. Canned green beans are already cooked, so you should not overcook them. Just before serving, add the cooked, crumbled bacon pieces. Salt and pepper will not be necessary for this delicious sweet and sour dish. Serves six. For a smaller batch, use only one can of green beans and 3-4 strips of bacon. Use only 1/3 cup of chopped onion and only 1/3 cup of sugar and vinegar. Another tip: , add a 2oz jar of pimentos for a little extra color. |
