Steve's Peanut Butter Pie

by Steven Hicks

My no-bake peanut butter pie is easy and delicious.   It's a great desert at holiday dinners, parties, potlucks or any occasion.

  • 1 - 9-inch, prepared graham cracker pie crust
  • 1 - 3oz package of cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup creamy peanut butter
  • 1/2 cup milk
  • 1 - 16oz container of Cool Whip desert topping, thawed
  • 1 - Heath or Skor toffee candy bar, crushed

Cream together with an electric mixer:  cream cheese, powdered sugar, peanut butter and milk.  Fold in Cool Whip by by hand.  With the candy bar still in the wrapper, place it on your countertop and pulverize with the handle of a table knife (works best if the candy bar is slightly chilled).  Add the pulverized bits of candy bar to the pie mixture but reserve one tablespoon for garnish.  Pour pie mixture into graham cracker pie shell and sprinkle the remaining bits of candy bar on top.  Cover pie and freeze.  Remove pie from freezer and allow it to thaw slightly before serving.  It should still be partially frozen when served.

This recipe can be easily doubled for two pies.
