The secret to this easy recipe is Cavender's Greek Seasoning, made in my home state of Arkansas. This is a popular seasoning for chicken, fish, beef and pork. This recipe has makes pork chops a regular menu item at my house.
Pour about 1/3 cup of olive oil in a shallow plate or saucer. Dredge pork chops in olive oil on both sides and place in a skillet, electric skillet or griddle. Please, do not flour your pork chops. Use medium heat--not too hot. Sprinkle chops with Cavender's Greek Seasoning on both sides. Cook on both sides until done. Cooking times will vary depending upon the thickness of your pork chops but you can figure about 8-10 minutes per side. Don't turn them over until they have browned on one side. Serve with mashed potatoes, any other vegetable and, of course, pork chops would not be complete without a serving of apple sauce. Alternate method: marinate several pork chops in a Zip-Lock bag with 1/2 cup of olive oil and 1 tablespoon of Cavender's Greek Seasoning for a couple of hours, then cook.
