Steve's Crockpot Pork Loin

by Steven Hicks

Here's an easy Crock Pot dish that you can start in the morning before you leave for work and enjoy as soon as you arrive home.

  • 1 - 4lb pork loin (that will fit in your Crockpot)
  • 2 Tbsps olive oil
  • 2 cloves of minced garlic
  • 3-4 strips of bacon
  • salt and pepper
  • a few sprigs of fresh sage
  • 2 cups of apple juice

Sear pork loin quickly in a hot skillet in a couple of tablespoons of olive oil. Sprinkle with salt and pepper and minced garlic.  Lay bacon strips on pork loin lengthwise and secure with toothpicks.  Add sprigs of sage.  Place in Crock Pot and add about one to two cups of apple juice, but not so much as to submerge the pork loin.  Cook on high for one hour, then switch to low for about seven hours.  If you happen to be home, baste occasionally with a turkey baster.

This recipe goes together quickly and does not have to be tended.  Works best in an oblong Crock Pot but you can cut your pork loin in half if you have a standard round one.  Recommended side dish:  steamed fresh cabbage and onions.
